Rosemary encrusted pineapple glazed pork loin roast
So we've been having these potlucks for months now, but have not 'till now officially made a food blog! Nevertheless, last week I had no idea what I wanted to make. I mean, I originally wanted to make a seafood stew, but the ingredients would have cost me an arm. So after working out Saturday with Charly and Juliet, I decided I wanted protein, and hence, pork loin roast! I had the idea in my head to make it, but never got around to finding a recipie for it. The good thing about it is, pork loin tastes great even just baked on its own. The recipie I found for it was last minute. The only thing to it was roasting a 2lb loin, glaze it with a mixture of pineapple and apricot preserves along with some horseradish, and add a crust of rosemary (which was originally not part of the recipie...I just did it for more flavor). I think it was safe to say that it worked out well, as it was pretty much gone before the night was over. Pictures to come!

Stuffed Cabbage Leaves
Lately, I've been having the cravings of a pregnant Russian woman. Stuffed cabbage leaves and borscht. Mmmmm.... peasant food (or so my part Russian friend says). So, last week, I decided to tackle the not so difficult but tedious task of making a batch. I stuffed it with beef, pork, rice, and onions, then topped it with sauerkraut, bacon, tomatoes and tomato sauce. For the next hour and a half, my stuffed cabbage leave baked contently in it's own juices. End result? A ginormous 9x13 roasting pan of deliciousness, but it did not last long... like most things in our apartment. It left the oven Saturday night and was non existent by Monday.
